GAPS Chicken Meat Stock (with a Chinese Twist)

  • Filtered water (enough to cover ingredients by 5 cm)
  • Fresh coriander (for garnish)

Instructions

  1. Clean the chicken
    Rinse the chicken thoroughly with salt water to remove impurities. Blanch briefly in hot water, then discard the water.
  2. Assemble the pot
    Place the chicken, giblets, ginger, carrots, peppercorns, red dates, wolfberries, dried scallops, kombu, and sea salt into a large stock pot.
  3. Add water
    Pour in enough filtered water to cover the ingredients by about 5 cm.
  4. Simmer gently
    Bring to a boil, then reduce heat and simmer uncovered for 1.5 hours.
  5. Serve
    Strain the broth, garnish with fresh coriander, and enjoy it warm.
