For decades, we were told a frightening story:
Cholesterol is dangerous. Butter will clog your arteries. Eggs will give you a heart attack. Fat is the enemy.
It was a story repeated so often — by magazines, government guidelines, food manufacturers, and even well-meaning doctors — that it became “truth.”
But a lie doesn’t become truth just because it’s been repeated long enough.
In fact, this fear of cholesterol may be one of the most damaging nutrition myths of our time.
A Story We Were Never Meant to Believe
I still remember a dear friend telling me how her doctor scolded her for eating butter and advised her to switch to margarine.
It saddened me — not because of her slightly elevated cholesterol, but because I realised how deeply fear-driven the conversation around food had become.
We forgot something simple and profound:
Cholesterol is not a mistake. It is a masterpiece of God’s design.
Cholesterol forms every cell membrane in your body.
Cholesterol is the raw material for your adrenal and sex hormones.
Cholesterol is essential for brain development, memory, and learning.
Cholesterol converts into vitamin D — the backbone of immunity.
Cholesterol is a repair molecule, dispatched whenever the body needs healing.
Why would a substance so essential to life suddenly become the villain?
The Real Science We Weren’t Told
In 2015, the U.S. Dietary Guidelines Advisory Committee quietly released a shocking statement:
“There is no appreciable relationship between dietary cholesterol and blood cholesterol.”
In simple words: The cholesterol you eat does NOT cause high cholesterol in your blood.
Your liver decides how much cholesterol your body needs — not your breakfast plate. If you eat less, the liver makes more.
If you eat more, the liver makes less.
It is a tightly regulated, intelligent system.
Your body is far wiser than the diet industry ever gave it credit for.
So What Did Go Wrong? The REAL Culprit
While we were told to fear butter and eggs, something far more harmful quietly entered our kitchens: vegetable oils and seed oils.
Their labels promised heart health.
Their ads showed smiling families.
Their bottles said “light” and “cholesterol-free.”
But behind the marketing…
these oils are one of the most biologically stressful substances we’ve ever introduced into our bodies.
Highly processed seed oils like soybean, corn, sunflower, safflower, and canola are:
- extracted using extreme heat, pressure, and chemical solvents
- stripped of their natural antioxidants
- unstable and easily oxidized
- prone to creating toxic by-products when heated
- linked to inflammation, metabolic dysfunction, and heart disease
As investigative journalist Nina Teicholz wrote, seed oils are anything but heart-healthy.
They oxidize inside the body, create free radicals, damage cell membranes, and burden the liver — undermining the very systems we need for healing.
Meanwhile, natural traditional fats — butter, ghee, tallow, lard, egg yolks — were demonized for decades.
We were told to throw away the foods our ancestors thrived on, and replace them with industrial oils no human being consumed before 1900.
Is it any wonder our chronic illnesses exploded?
Why GAPS Embraces Traditional Fats — And Why Your Body Needs Them
The GAPS Nutritional Protocol brings us back to what is biologically appropriate — the foods God designed for our bodies, not the foods factories engineered for shelves.
That’s why GAPS:
- uses fatty, collagen-rich meat stocks
- encourages egg yolks, butter, ghee, animal fats
- nourishes with saturated fats that strengthen cell membranes
- avoids all seed oils completely
When your body is trying to heal — from autoimmune conditions, allergies, mental health symptoms, inflammation, digestive disorders — it needs raw materials for regeneration.
It cannot rebuild new cells without cholesterol.
It cannot repair the gut lining without saturated fat.
It cannot calm inflammation while drowning in seed oils.
To heal, we must give our body what it was made for — not what marketing told us to eat.
Maybe it’s time we asked…
What if cholesterol was never the problem?
What if avoiding it has been keeping us from healing?
We have lived under this myth for too long.
But once you understand your body’s biology — its brilliance, its design, its needs — something shifts.
Fear turns into confidence.
Confusion turns into clarity.
And healing becomes possible again.
